Easy Wholemeal Bread

My recipe for 1 kg of wholemeal bread is as follows:
  1. 700 g of 100% wholemeal stoneground organic flour
  2. 400 g of water
  3. 20 g of ground organic flax seed - I use a cheap coffee blade grinder
  4. 10 g of active dried yeast or 20 g of fresh yeast
My method:
  1. Add cold water to ground flax seed and stir
  2. Heat in microwave oven to 38 degrees centigrade
  3. Add yeast and stir
  4. Stir again after 10 minutes, add to flour in breadmaker and make dough
  5. Meanwhile heat two non-stick trays in a conventional fan oven set to 40 degrees centigrade
  6. Divide dough into 16 rolls and place onto trays
  7. Return trays to warm oven and maintain at between 35 and 40 degrees centigrade for an hour
  8. Bake for 18 minutes after changing oven control to 200 degrees centigrade
  9. Remove from oven
  10. Put cold rolls in sealed plastic bags and store in a cool place
I consistently get uniform density rolls which I like spread with homemade margarine and orange and lemon marmalade.
