Easy Wholemeal Bread
My recipe for 1 kg of wholemeal bread is as follows:
- 700 g of 100% wholemeal stoneground organic flour
- 400 g of water
- 20 g of ground organic flax seed - I use a cheap coffee blade grinder
- 10 g of active dried yeast or 20 g of fresh yeast
My method:
- Add cold water to ground flax seed and stir
- Heat in microwave oven to 38 degrees centigrade
- Add yeast and stir
- Stir again after 10 minutes, add to flour in breadmaker and make dough
- Meanwhile heat two non-stick trays in a conventional fan oven set to 40 degrees centigrade
- Divide dough into 16 rolls and place onto trays
- Return trays to warm oven and maintain at between 35 and 40 degrees centigrade for an hour
- Bake for 18 minutes after changing oven control to 200 degrees centigrade
- Remove from oven
- Put cold rolls in sealed plastic bags and store in a cool place
I consistently get uniform density rolls which I like spread with homemade margarine and orange and lemon marmalade.
