What is wrong with supermarket milk?



There is probably nothing wrong with supermarket milk but, in the UK, it is not the same as the milk delivered by the milkman.

For some time practically all UK supermarket milk has been homogenised by forcing it through a very small hole at high pressure.

The resulting milk can have some disconcerting characteristics:

It appears to last longer but it gives little warning when it is about to go sour. Whereas 'normal' milk gives a warning well before it goes sour by floating small quantities of fat to the surface of tea or coffee homogenised milk does not. Coffee and tea made with homogenised milk near its end of life can appear normal but hide a thick layer of foul looking sludge which is only discovered when most of it has been consumed.

It is perfectly legal in the UK to sell this as 'normal' milk without warning the customer that it is homogenised.
