Four Fruit Marmalade
Introduction
Here is a simple way to make about 6 kg (13 lb) of four fruit marmalade with 33% fruit and 55% added sugar.
Ingredients
- Fruit about 2 kg - 1 lime, 1 lemon, 2 pink grapefruit and oranges
- Sugar 5/3 weight of fruit
- Water 2/3 weight of fruit
Method
- Scrub fruit thoroughly in warm water to clean and remove most wax
- Remove peel from lemon, grapefruit and oranges and mince it
- Add minced peel to water and simmer for an hour
- Thoroughly liquidise all remaining fruit including pips and pith
- Add liquidised fruit and sugar to hot simmered peel without draining it
- Boil rapidly to 106 degrees Centigrade and check setting
- The weight of marmalade produced by this method is about 3 times the weight of fruit used
